Fish Folk
I think a pair of mature Keyhole Cichlids would be interesting. You've already got color. Gentle, but larger option . . . 1

Chick-In-Of-TheSea
Hey @Fish Folk - While we are on the subject. this question came up on another thread yesterday. Would Bolivian Rams eat the friendly neighborhood shrimps? @redfish 2
SugarBassJoe
Not really a center piece fish, but I personally like the look of bigger schools of smaller fish in an aquarium, so maybe adding some more neon's for a center piece school? ( if that's even a thing) idk, that's just my idea.

I have shrimp in with my adult angels without much issue. Sometimes I move an angle to another tank with a booming population, but they never eliminate all the shrimp.

RadMax8
What are you looking for in a centerpiece fish? Big color, big personality, larger size? Most fish you would consider a centerpiece fish will be on the larger side and may snack on some shrimp. I have a group of four pearl gourami in my 40b and I love them, but they might munch some cherry shrimp.
onlywei
I don't really know of any centerpiece fish that wouldn't attempt to eat shrimp.
plantedAlex
I am looking for something on the colorful side about medium size not too large. Not really concerned about them eating some shrimp every now and then it's hard to tell because most of them hide during the day there are tons of shrimp in this tank.

K McZongo
Could add a pile of rocks for more cover if you are worried about your shrimp colony. You can try a school of Madagascar rainbow fish or congo tetras. Anything big enough will pick off some shrimp. I have a tank where the shrimp colony is kept in control since my millennium rainbows pick some off. Only issue is you don't see the shrimp out as much.
MAC
I don't know how it would go with the tetras but if you put a lid on the tank maybe an African butterfly fish?
