Hello.

I saw some youtubers have some house plants sticking out water on the back of their tanks. Anyone know low light plant that can live with roots in water?

Almost any houseplant that can thrive with “wet feet” meaning they do not require a drain hole in the pot does well. 
I’ve tried dozens of types that work.  The ones that thrive the most with the least light are peace lilies, lucky bamboo and pothos. 
Here are a few of my tanks showing emergents. You can get creative with many. Plant life project is a YouTube channel that explores many emergents.

So, basically you’re setting up a hydroponic garden. Most plants can handle that to a certain degree. You could even do vegetables. Things like lettuce, spinach, and kale you’d want to start in dirt and rinse off before adding to your water. Things like broccoli or cauliflower would need support for the heavy stems. But you could also do beans or even things like strawberries. The only limit is imagination. 

or most houseplants are low light plants and can be used. Avoid plants that need little water. Epiphytes and desert plants. Most other plants should be fine. Keeping the stems out of the water. Just the roots in. Wash off all dirt very well as that could contain fertilizer or pesticide from the store. 
 

the most common, low light plant for aquarium use is going to be the pothos vine. It requires little support and is a demon at sucking up nitrates.

And of course, @Guppysnail’s tanks are just stunning. If you look and see something you like but don’t know what it is. I’m sure she’ll help you figure it out. Looks like she also uses a grow light? And egg crate for support on the bottom? That opens up all kinds of possibilities.

Yes to egg crate. The lights are standard led.  Most common plants do best with straight white light so I do not spend the extra money on grow lights. 
I did not start out with any extra lights for my emergents. They just grew so much and I wanted a few that needed a bit more light like the monstera (the ginormous ones) so I added lights after it became a jungle. 

@Tony s those photos were taken just after I added the lights. This is them now very out of control 🤣
