We had a 10 gallon set up and cycled we had just moved snails into that we wanted to protect from the Yakuza, so our older males went in that one.

I think you'll be fine. In my limited experience, unless you have jumping fish even a tank with a rim will keep most stuff in.
Granted I haven't kept shrimp long, but ours are just in a tank with floaters...no lid.- 1

There's lots of great advice here. I'd start by asking you what interests you as far as the hobby? What fish have you been thinking of?
My biggest general piece of advice is study up on cycling tanks. It was one of my biggest hurdles when we got started. -

I use a nano sponge filter in my growout tub, but still lots of water changes.

Cardinal Tetras are some of the coolest schooling fish, in my humble opinion. Although I might do green or regular neons in a 20g for more numbers.
If you're looking for sheer numbers, chili rasboras are great too, you could do quite a few in a 20g.

Just checking the specs, it looks like a solid setup.
You could do shrimp, a betta, maybe some celestial pearl danios. Snails would be fun too!
