I’d say 2-3 honey gourami are likely fine, assuming they’re the true honey gourami, and not the thick-lipped honey gourami (they are often more aggressive towards other the true honey gourami and get larger). 
This would give you fish more at the top level, so they’d likely have a nice big space of their own to hang out in, as all of the other fish tend to reside lower than that.

I don’t disagree, but I also think they’re pretty flexible. I have a pair of honeys in my 55 and they’re loving life. I wouldn’t hesitate to do a pair or trio.
