Bacteria!

Plants doesn't eat a lot of nitrates if they can get ammonia or nitrites. But I suppose that's probably disputed. 

Water changes is the preferred method to get rid of them nitrates.

How to prevent ? Still doing water changes but hate seeing my nitrates around 50

What I would do is not use your liquid fertilizer for two weeks and retest your water with high levels of nitrate coming from your tap water  it might be liquid fertilizer push you nitrate higher couple with high levels in your tap water
