Freshwater Aquarium Levels

What are the target levels of Nitrate in a freshwater aquarium? My nitrate looks like its at 40ppm while my nitrite is near 0. It has been about 2 months since I have had to do a water change so the tank it self is fairly self sustaining. Also, is there somewhere that lists how often to feed certain fish? I've been feeding my glowfish once per day but i'm not sure if i should lower that to every other.

I think the commonly accepted number for nitrate is 20 or below.  Nitrite is 0 ppm.  Once a day is adequate for feeding.  Two of my tanks regularly show Nitrates at 40-50 ppm and 0 Nitrite.  They get fed once daily, with a second feeding after weekly maintenance, and an occasional treat.  An occasional fasting day will not hurt.
