I'm still cycling my 20gallon tank. It is fishless with Ada Amazonia and some plants with bladder snails. Should I just leave it or do a water change?

As your doing a fishless cycle holed off on water changes as you have ammonia source just monitor till your ammonia and nitirte go to zero and nitrates stay around 10-20ppm then do a water change before adding fish

I would do a 50% water change with that ammonia and nitrite or you could lose your snails and cause such high values that it stalls your cycle.  It can be high, but too high and it’s too toxic even for the bacteria.
