  1. It appears to be a color variant of some type from the Genus Faxonius. What area of the US are you? This genus is common throughout the North Eastern US. Some possible matches: Faxonius obscurus (Allegheny crayfish) https://www.inaturalist.org/observations/22197953 Virile Crayfish (Northern Crayfish) Calico Crayfish (Papershell Crayfish)
  2. Most commercial hornwort is grown outdoors/greenhouse so most likely some type of flying insect larvae or nymph stage. I would remove them but you could also monitor them as they mature as too maybe get a positive ID.
  3. I keep these. They are Pseudomugil signifer. LFS sells them as Signifer Rainbow or Pacific Blue Eye.
